Tomato Salsa

Living Food Feast from Sprout Raw Food
Serves 8
Ingredients:
- 4 cups tomatoes chopped
- 3 jalapeno peppers, seeded
- 3 garlic cloves, minced fine
- 1 onion
- ½ cup fresh cilantro
- ½ cup fresh basil
- 2 limes, juiced
- 2 teaspoons sea salt
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 red pepper, seeded
- 1 cup sun-dried tomatoes, soaked in filtered water
Steps:
- Place garlic in the food processor and chop into small pieces.
- Add jalapenos, cilantro, basil, lime juice, salt, cumin, and chili powder into the food processor and chop until very fine.
- Pour this mixture into a bowl with the chopped tomatoes.
- Place red pepper in the processor, chop fine and add to tomatoes.
- Place onion in the processor, chop fine and add to tomatoes.
- Place the sun-dried tomatoes in the processor and chop until smooth like tomato paste. Blend sun-dried tomatoes with the salsa mixture in a bowl.
