Parmesan "Cheese"

Living Food Feast from Sprout Raw Food

Serves 8

Ingredients:

  • 2 cups macadamia nuts, soaked for 8 hours and drained
  • 2 cups filtered water
  • 1 teaspoon salt
  • 1 lemon, freshly juiced
  • 1 cup pine nuts, soaked for 8 hours and drained

Steps:

  1. Place macadamia nuts, filtered water, salt, and lemon juice in blender and blend until smooth.
  2. Add pine nuts and blend until smooth.
  3. Spread cheese on teflex sheets as thinly as possible and dehydrate until completely dry.
  4. Scrape off teflex sheets using a spatula.
  5. Crumble cheese and place in a container.
Note: Keep this cheese refrigerated and it will last for a month or more. Dry herbs can be added for variety.
