Italian Nut Balls

Living Food Feast from Sprout Raw Food

Serves 8

Ingredients:

  • 2 cups walnuts, soaked 8 hours and drained
  • 2 cups sunflower seeds, soaked 8 hours and drained
  • 1 onion, chopped very fine
  • 1 teaspoon sea salt
  • 2 teaspoons cumin
  • 2 cloves garlic, chopped fine
  • ½ cup fresh basil
  • ½ cup fresh oregano
  • 1 cup sun-dried tomatoes, soaked 2 hours, drained, and processed into paste
  • 1 red pepper, chopped fine

Steps:

  1. Place garlic in food processor and process well. Add oregano and basil chopping well.
  2. Add onion, salt, cumin, and sun-dried tomato paste in food processor and process until almost smooth.
  3. Add sunflower seeds and walnuts processing well.
  4. Remove to a bowl and add chopped red pepper, and dry sunflower seeds blending well.
  5. Form balls and place on a teflex sheet.
  6. Place in dehydrator for 8-12 hours until dry.

Serving suggestion: Serve with Marinara Sauce over zuchinni pasta
