Berry Cheesecake Pizza

Living Food Feast from Sprout Raw Food
Yields 3 cups
Ingredients:
- 1 cup macadamia nuts, soaked for 8 hours and drained
- ½ cup filtered water
- ½ vanilla bean
- 1 teaspoon sea salt
- ½ cup lemon freshly juiced (2 lemons)
- 1 tablespoon lemon zest (2 lemons)
- 1 cup raw honey
- 1 cup pine nuts, soaked for 8 hours and drained
- 2 teaspoons psyllium
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 1 cup kiwi fruit, sliced
- 1 cup fresh strawberries, sliced
- 1 Honey, Nut and Date Pie Crust
Steps:
- Place macadamia nuts, filtered water, salt, vanilla bean, honey, lemon zest and lemon juice in blender and blend until smooth.
- Add pine nuts and blend until smooth.
- Add psyllium to mixture blending until smooth, let this mixture sit for 5 minutes and blend again.
- Spread on a prepared piecrust pressed on a large round platter in a pizza shape.
- Place each
type of fruit in a circle inside the pie.
