Berry Cheesecake Pizza

Living Food Feast from Sprout Raw Food

Yields 3 cups

Ingredients:

  • 1 cup macadamia nuts, soaked for 8 hours and drained
  • ½ cup filtered water
  • ½ vanilla bean
  • 1 teaspoon sea salt
  • ½ cup lemon freshly juiced (2 lemons)
  • 1 tablespoon lemon zest (2 lemons)
  • 1 cup raw honey
  • 1 cup pine nuts, soaked for 8 hours and drained
  • 2 teaspoons psyllium
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup kiwi fruit, sliced
  • 1 cup fresh strawberries, sliced
  • 1 Honey, Nut and Date Pie Crust

Steps:

  1. Place macadamia nuts, filtered water, salt, vanilla bean, honey, lemon zest and lemon juice in blender and blend until smooth.
  2. Add pine nuts and blend until smooth.
  3. Add psyllium to mixture blending until smooth, let this mixture sit for 5 minutes and blend again.
  4. Spread on a prepared piecrust pressed on a large round platter in a pizza shape.
  5. Place each type of fruit in a circle inside the pie.
